Description

Delicious and healthier muffins made with cottage cheese and mixed berries.


Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ⅓ cup honey or maple syrup
  • ¼ cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mixed berries (blueberries, raspberries, or chopped strawberries)
  • 2 tablespoons flour (for coating berries)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
  2. In a blender or food processor, blend the cottage cheese until smooth.
  3. In a large bowl, whisk together the blended cottage cheese, eggs, honey, melted butter, and vanilla.
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and stir until just combined.
  6. Toss the berries with 2 tablespoons of flour, then gently fold them into the batter.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • For extra protein, replace ¼ cup of the flour with vanilla protein powder.
  • Frozen berries can also be used—add them straight from the freezer without thawing.
