Description
Delicious and healthier muffins made with cottage cheese and mixed berries.
Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ⅓ cup honey or maple syrup
- ¼ cup melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup mixed berries (blueberries, raspberries, or chopped strawberries)
- 2 tablespoons flour (for coating berries)
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease it.
- In a blender or food processor, blend the cottage cheese until smooth.
- In a large bowl, whisk together the blended cottage cheese, eggs, honey, melted butter, and vanilla.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- Toss the berries with 2 tablespoons of flour, then gently fold them into the batter.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- For extra protein, replace ¼ cup of the flour with vanilla protein powder.
- Frozen berries can also be used—add them straight from the freezer without thawing.
