Description

A delicious and easy no-bake cherry cheesecake with a graham cracker crust, perfect for any sweet treat occasion.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup heavy whipping cream, cold
  • 1/2 cup sour cream
  • 1 can (21 oz) cherry pie filling
  • Fresh cherries, optional, for garnish

Instructions

  1. Prepare the crust. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs resemble wet sand.
  2. Press into the pan. Transfer the mixture into a 9-inch springform pan. Press firmly across the bottom and slightly up the sides. Refrigerate for at least 20–30 minutes.
  3. Beat the cream cheese. In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar, vanilla extract, lemon juice, and sour cream. Beat until fully combined.
  4. Whip the cream. In a separate chilled bowl, whip the cold heavy cream until stiff peaks form.
  5. Fold the filling together. Gently fold the whipped cream into the cream cheese mixture in batches until light and fluffy. Avoid overmixing to preserve the airy texture.
  6. Fill the crust. Spoon the cheesecake filling over the chilled crust. Smooth the top with a spatula.
  7. Chill until firm. Cover and refrigerate for at least 6 hours, preferably overnight, until the filling is set.
  8. Add the cherry topping. Spread the cherry pie filling evenly over the chilled cheesecake just before serving.
  9. Slice and serve. Carefully release the sides of the springform pan. Slice with a sharp knife, wiping the blade between cuts for neat slices.

Notes

  • Use full-fat cream cheese for a rich, creamy filling.
  • Make sure the cream cheese is softened to prevent lumps.
  • Whip the heavy cream to stiff peaks so the cheesecake holds its shape.
  • Chill overnight for the cleanest slices and best texture.
  • For extra flavor, add a little lemon zest to the filling.
