Description

Delicious donuts filled with creamy Biscoff cookie butter, coated in sugar and cinnamon, perfect for a sweet treat.


Ingredients

  • 2½ cups (315 g) all-purpose flour
  • ¼ cup (50 g) granulated sugar
  • 2¼ tsp (7 g) instant yeast
  • ½ tsp salt
  • ¾ cup (180 ml) warm milk
  • 1 large egg
  • 3 tbsp (45 g) unsalted butter, softened
  • 1 tsp vanilla extract
  • Vegetable oil, for frying
  • 1 cup (240 g) Biscoff cookie butter
  • 2 tbsp heavy cream or milk, optional, for a softer filling
  • ½ cup granulated sugar
  • ½ tsp cinnamon, optional
  • Crushed Biscoff cookies, optional

Instructions

  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let sit for 5–10 minutes until foamy.
  2. Add flour, remaining sugar, salt, egg, and vanilla. Mix until a dough forms.
  3. Add softened butter and knead for 8–10 minutes, until smooth and elastic.
  4. Cover and let rise in a warm place for about 1–1½ hours, or until doubled in size.
  5. Roll the dough to about ½-inch (1.3 cm) thick. Cut into rounds about 3 inches wide. Place on parchment paper and cover. Let rise for another 30–45 minutes.
  6. Heat oil to 350°F (175°C). Fry the donuts for about 1–2 minutes per side, until golden brown. Drain on paper towels.
  7. While still slightly warm, toss the donuts in granulated sugar mixed with cinnamon.
  8. Transfer Biscoff cookie butter to a piping bag fitted with a small round tip. Make a small hole in the side of each donut and pipe in plenty of cookie butter.
  9. Drizzle with melted Biscoff cookie butter and sprinkle with crushed Biscoff cookies.

Notes

  • For a softer filling, add heavy cream or milk to the Biscoff cookie butter.
  • Ensure the oil is at the right temperature for frying to achieve a golden brown color.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for a couple of days.
