Description
A delicious and unique twist on the classic grilled cheese sandwich, featuring creamy Brie cheese and a sweet blueberry filling.
Ingredients
- 1 cup fresh blueberries
- 1 tablespoon honey
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon finely grated lemon zest, optional
- 1 teaspoon fresh thyme leaves, optional
- 1 pinch salt
- 4 slices sourdough bread or thick-cut country bread
- 6 oz Brie cheese, sliced
- 2 tablespoons unsalted butter, softened
- 1 teaspoon Dijon mustard, optional
- 1 tablespoon chopped pecans or walnuts, optional
Instructions
- Prepare the Blueberry Filling: Place the blueberries in a small saucepan over medium-low heat. Add the honey, lemon juice, lemon zest if using, and a pinch of salt. Cook for 4–6 minutes, stirring gently, until the blueberries begin to burst and release their juices. Lightly mash a few berries with the back of a spoon, leaving some whole for texture. Remove from the heat and stir in the fresh thyme, if desired. Allow the mixture to cool for a few minutes so it thickens slightly.
- Prepare the Bread: Spread softened butter evenly over one side of each bread slice. Turn the slices over so the unbuttered sides face up. If desired, spread a thin layer of Dijon mustard on the inside of two slices for a subtle tangy flavor.
- Assemble the Sandwiches: Place Brie slices over the unbuttered side of two bread slices. Spoon the blueberry mixture over the Brie, spreading it evenly without adding too much liquid. Sprinkle with chopped pecans or walnuts if using. Top with the remaining bread slices, keeping the buttered sides facing outward.
- Grill the Sandwiches: Heat a skillet over medium-low heat. Place the sandwiches in the skillet and cook for 3–5 minutes on the first side, until the bread is golden brown and crisp. Carefully flip the sandwiches and cook for another 3–5 minutes, until the second side is golden and the Brie has melted. If the bread browns too quickly, reduce the heat and cover the skillet briefly to help the cheese melt.
- Rest and Serve: Transfer the sandwiches to a cutting board and let them rest for 1–2 minutes. Slice in half and serve warm while the Brie is creamy and the blueberry filling is sweet and tangy.
Notes
- For a more intense flavor, use aged Brie cheese.
- Feel free to substitute the nuts with your favorite type or omit them entirely.
