Ingredients
- 2 cups graham cracker crumbs
- ⅓ cup granulated sugar
- ½ teaspoon ground cinnamon (optional)
- ½ cup unsalted butter, melted
- 24 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1 teaspoon vanilla extract
- ½ cup sour cream
- 2 tablespoons all-purpose flour
- 2 cups fresh or frozen blueberries
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
- 2 tablespoons water
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat the oven to 325°F (163°C). Line a 9 × 13-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, combine the graham cracker crumbs, sugar, cinnamon (if using), and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes. Remove from the oven and let cool slightly.
- In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat for 5–7 minutes, stirring occasionally. Mix the cornstarch with the water until smooth. Stir the slurry into the blueberries and cook for 1–2 minutes, until thickened. Remove from the heat and stir in the lemon zest, if using. Let cool slightly.
- In a large bowl, beat the cream cheese until smooth. Add the sugar and beat until combined. Beat in the eggs and egg yolk one at a time. Mix in the vanilla extract, sour cream, and flour until smooth. Do not overmix.
- Pour the cheesecake filling over the cooled crust and spread evenly. Spoon the blueberry topping over the cheesecake filling. Use a knife or skewer to gently swirl the blueberry mixture into the cheesecake.
- Bake for 35–40 minutes, or until the edges are set and the center has a slight jiggle.
Notes
- For a richer flavor, use full-fat cream cheese.
- Let the bars cool completely before slicing for cleaner edges.
