Description
Delicious blueberry cheesecake rolls made with soft bread, cream cheese, and fresh blueberries, topped with a sweet blueberry sauce.
Ingredients
- 8 slices white sandwich bread, crusts removed
- 4 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 tsp vanilla extract
- ½ cup fresh blueberries
- 1 large egg
- 2 tbsp milk
- ½ tsp ground cinnamon
- 2 tbsp butter, melted
- 1 cup fresh blueberries (for topping)
- 2 tbsp granulated sugar (for topping)
- 1 tbsp lemon juice (for topping)
- 1 tsp cornstarch (for topping)
- 1 tbsp water (for topping)
- ½ cup powdered sugar (for finishing)
- 1–2 tbsp milk (for finishing)
- ½ tsp vanilla extract (for finishing)
Instructions
- Make the blueberry topping: Add blueberries, sugar, and lemon juice to a small saucepan over medium heat. Cook for 3–4 minutes, gently crushing some of the berries. Stir cornstarch with water, add it to the pan, and cook for another 1–2 minutes until thickened. Remove from heat and let cool.
- Prepare the cheesecake filling: Beat the softened cream cheese, sugar, and vanilla until smooth and creamy. Gently fold in the fresh blueberries.
- Flatten the bread: Use a rolling pin to flatten each bread slice. Spread about 1 tablespoon of cheesecake filling over one end of each slice.
- Roll: Carefully roll the bread tightly around the filling, forming a neat cylinder. Place seam-side down.
- Prepare the coating: Whisk together the egg, milk, and cinnamon in a shallow bowl.
- Coat the rolls: Dip each roll into the egg mixture, turning gently to coat all sides.
- Cook: Heat a large skillet over medium heat and melt the butter. Place the rolls seam-side down and cook for about 2–3 minutes per side, turning until golden brown all around.
- Finish: Mix powdered sugar, milk, and vanilla to make a thin glaze. Drizzle over the warm rolls and spoon the blueberry topping over the top.
- Serve: Enjoy warm while the cheesecake filling is soft and creamy.
Notes
- For a richer flavor, use a flavored cream cheese.
