Description

A delicious and easy recipe for Blueberry Cream Cheese Puff Pastry, perfect for a sweet treat.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 4 oz (113 g) cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 teaspoon cornstarch
  • 1 tablespoon granulated sugar (for blueberries)
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons sliced almonds (optional)
  • Coarse sugar for sprinkling (optional)
  • ½ cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, beat together the cream cheese, 2 tablespoons sugar, and vanilla until smooth.
  3. In another bowl, gently toss the blueberries with the cornstarch and 1 tablespoon sugar.
  4. Unfold the puff pastry and cut it into 8 equal rectangles.
  5. Score a ½-inch border around each rectangle with a knife, being careful not to cut all the way through.
  6. Spread about 1 tablespoon of the cream cheese mixture in the center of each pastry.
  7. Spoon several blueberries on top of the cream cheese.
  8. Whisk together the egg and water to make an egg wash. Brush the pastry borders with the egg wash.
  9. Sprinkle with sliced almonds or coarse sugar, if desired.
  10. Bake for 18–22 minutes, or until the pastry is puffed and deep golden brown.
  11. Let cool for about 10 minutes.
  12. Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the warm or cooled pastries.
