A delicious and easy recipe for Blueberry Cream Cheese Puff Pastry, perfect for a sweet treat.
Ingredients
- 1 sheet frozen puff pastry, thawed
- 4 oz (113 g) cream cheese, softened
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1 teaspoon cornstarch
- 1 tablespoon granulated sugar (for blueberries)
- 1 egg
- 1 tablespoon water
- 2 tablespoons sliced almonds (optional)
- Coarse sugar for sprinkling (optional)
- ½ cup powdered sugar (for glaze)
- 1–2 tablespoons milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, beat together the cream cheese, 2 tablespoons sugar, and vanilla until smooth.
- In another bowl, gently toss the blueberries with the cornstarch and 1 tablespoon sugar.
- Unfold the puff pastry and cut it into 8 equal rectangles.
- Score a ½-inch border around each rectangle with a knife, being careful not to cut all the way through.
- Spread about 1 tablespoon of the cream cheese mixture in the center of each pastry.
- Spoon several blueberries on top of the cream cheese.
- Whisk together the egg and water to make an egg wash. Brush the pastry borders with the egg wash.
- Sprinkle with sliced almonds or coarse sugar, if desired.
- Bake for 18–22 minutes, or until the pastry is puffed and deep golden brown.
- Let cool for about 10 minutes.
- Whisk together the powdered sugar, milk, and vanilla until smooth. Drizzle over the warm or cooled pastries.
Notes
- Room Temperature: Up to 1 day in an airtight container.
- Refrigerator: Up to 3 days.
- Freezer: Freeze baked pastries for up to 2 months. Reheat in a 350°F (175°C) oven for 8–10 minutes to restore crispness.
- Frozen blueberries can be used—do not thaw them before baking.
- Add 1 teaspoon of lemon zest to the cream cheese mixture for a fresh citrus flavor.
