Description
A delicious and quick stir-fry featuring tender beef strips and fresh bok choy, perfect for a weeknight dinner.
Ingredients
- 1 lb beef sirloin or flank steak, thinly sliced
- 1 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil
- ½ tsp black pepper
- 1 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 4 cups bok choy, chopped
- ½ small onion, sliced
- 1 red bell pepper, thinly sliced
- ¼ cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- ½ cup beef broth
- 1 tsp cornstarch
- ½ tsp sesame oil
Instructions
- Marinate the beef: Toss the sliced beef with soy sauce, cornstarch, sesame oil, and black pepper. Let it sit for 10–15 minutes.
- Make the sauce: In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, beef broth, cornstarch, and sesame oil.
- Cook the beef: Heat vegetable oil in a large skillet or wok over high heat. Add the beef in a single layer and stir-fry for 2–3 minutes until browned. Remove and set aside.
- Stir-fry the vegetables: Add garlic and ginger to the same skillet. Cook for about 30 seconds. Add onion and bell pepper and stir-fry for 2 minutes.
- Add bok choy: Add the bok choy and cook for 2–3 minutes, until the stems are tender-crisp and the leaves are wilted.
- Combine: Return the beef to the skillet and pour in the sauce. Toss everything together and cook for 1–2 minutes, until the sauce thickens and coats the beef and vegetables.
- Serve: Serve immediately over steamed white rice or noodles.
Notes
- For a spicier version, add red pepper flakes or sliced chili peppers.
- Feel free to substitute other vegetables like snap peas or carrots.
- This dish can be made ahead of time and reheated for a quick meal.
