Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup sun-dried tomatoes, chopped
  • ½ cup heavy cream
  • ½ cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella cheese
  • ¼ tsp red pepper flakes, optional
  • 2 tbsp fresh basil, chopped

Instructions

  1. Preheat the oven: Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. Season the cauliflower: Toss cauliflower florets with olive oil, garlic, Italian seasoning, paprika, salt, and black pepper. Spread in a single layer.
  3. Roast: Roast for 25–30 minutes, turning halfway through, until golden brown and tender.
  4. Make the creamy sauce: While the cauliflower roasts, combine heavy cream, broth, Parmesan, sun-dried tomatoes, and red pepper flakes in a skillet over medium heat. Simmer for 3–5 minutes, stirring until slightly thickened.
  5. Combine: Add the roasted cauliflower to the skillet and gently toss to coat with the creamy sauce.
  6. Add cheese: Transfer to a baking dish if needed. Sprinkle mozzarella over the top.
  7. Finish baking: Return to the oven for 5–8 minutes, until the cheese is melted and lightly golden.
