Ingredients
- 2 cups fresh broccoli florets
- 1 large apple, diced (preferably a sweet variety like Fuji or Honeycrisp)
- 1/2 cup shredded carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts or pecans
- 1/4 cup red onion, finely chopped
- 1/2 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the broccoli florets, diced apple, shredded carrots, raisins, chopped nuts, and red onion. Toss gently to mix all the ingredients evenly.
- In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and toss until everything is well coated.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
