Description

A creamy and delicious Broccoli Cheddar Lasagna Soup made without heavy cream, featuring ground beef or Italian sausage, fresh broccoli, and a blend of cheeses.


Ingredients

  • 1 tablespoon olive oil
  • 1 lb ground beef or Italian sausage
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups chicken or vegetable broth
  • 2 cups whole milk
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 8 lasagna noodles, broken into bite-size pieces
  • 3 cups broccoli florets, cut into small pieces
  • 1 tablespoon all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese, for serving
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef or sausage and cook until browned, breaking it apart as it cooks.
  2. Add the onion and cook for 3–4 minutes, until softened. Stir in the garlic and cook for another 30 seconds.
  3. Season with Italian seasoning, paprika, salt, and black pepper.
  4. Sprinkle the flour over the meat mixture and stir for 1 minute.
  5. Slowly pour in the broth while stirring, followed by the milk and diced tomatoes.
  6. Bring the soup to a gentle boil.
  7. Add the broken lasagna noodles and cook for 8–10 minutes, stirring occasionally.
  8. Add the broccoli and cook for another 5–7 minutes, until the broccoli is tender and the noodles are cooked.
  9. Reduce the heat to low. Gradually stir in the cheddar and Parmesan until melted and the soup is creamy.
  10. Taste and adjust the seasoning as needed.
  11. Ladle into bowls and top each serving with a spoonful of ricotta and fresh parsley.
  12. Serve hot with crusty garlic bread.

  • Add the cheddar over low heat rather than at a rolling boil to help the cheese melt smoothly without becoming grainy.
