Description
A delicious and comforting casserole made with chicken, broccoli, and rice, perfect for family dinners.
Ingredients
- 500 g boneless, skinless chicken breasts, cut into bite-size pieces
- 300 g uncooked long-grain white rice
- 300 g broccoli florets, fresh or frozen
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
- 1 can (about 300 g) condensed cream of chicken soup
- 240 ml chicken broth
- 120 ml milk
- 150 g sour cream
- 200 g shredded cheddar cheese, divided
- 50 g grated Parmesan cheese
- ½ tsp Italian seasoning
Instructions
- Preheat your oven to 190°C. Lightly grease a 23 × 33 cm baking dish.
- Place the chicken pieces in a bowl and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
- In a large bowl, whisk together the cream of chicken soup, chicken broth, milk, and sour cream until smooth.
- Add the uncooked rice, diced onion, garlic, broccoli, Italian seasoning, and half of the cheddar cheese to the sauce. Stir well.
- Fold the seasoned chicken into the rice mixture.
- Spread everything evenly in the prepared baking dish. Cover tightly with aluminum foil.
- Bake covered for 30 minutes. Carefully remove the foil, stir gently, and check the rice.
- If the rice still needs more liquid, add 60–120 ml warm chicken broth.
- Sprinkle the remaining cheddar and Parmesan over the top.
- Return to the oven uncovered for another 10–15 minutes, until the rice is tender, the chicken is cooked through to 74°C, and the cheese is melted and bubbly.
- Let the casserole rest for 5–10 minutes before serving.
Notes
- For a healthier option, you can use brown rice instead of white rice, but adjust the cooking time accordingly.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- Feel free to add other vegetables like carrots or bell peppers for extra nutrition.
