Description

A delicious and comforting casserole made with chicken, broccoli, and rice, perfect for family dinners.


Ingredients

  • 500 g boneless, skinless chicken breasts, cut into bite-size pieces
  • 300 g uncooked long-grain white rice
  • 300 g broccoli florets, fresh or frozen
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 can (about 300 g) condensed cream of chicken soup
  • 240 ml chicken broth
  • 120 ml milk
  • 150 g sour cream
  • 200 g shredded cheddar cheese, divided
  • 50 g grated Parmesan cheese
  • ½ tsp Italian seasoning

Instructions

  1. Preheat your oven to 190°C. Lightly grease a 23 × 33 cm baking dish.
  2. Place the chicken pieces in a bowl and toss with olive oil, paprika, garlic powder, onion powder, salt, and black pepper.
  3. In a large bowl, whisk together the cream of chicken soup, chicken broth, milk, and sour cream until smooth.
  4. Add the uncooked rice, diced onion, garlic, broccoli, Italian seasoning, and half of the cheddar cheese to the sauce. Stir well.
  5. Fold the seasoned chicken into the rice mixture.
  6. Spread everything evenly in the prepared baking dish. Cover tightly with aluminum foil.
  7. Bake covered for 30 minutes. Carefully remove the foil, stir gently, and check the rice.
  8. If the rice still needs more liquid, add 60–120 ml warm chicken broth.
  9. Sprinkle the remaining cheddar and Parmesan over the top.
  10. Return to the oven uncovered for another 10–15 minutes, until the rice is tender, the chicken is cooked through to 74°C, and the cheese is melted and bubbly.
  11. Let the casserole rest for 5–10 minutes before serving.

Notes

  • For a healthier option, you can use brown rice instead of white rice, but adjust the cooking time accordingly.
  • This casserole can be made ahead of time and stored in the refrigerator before baking.
