A delicious and refreshing Broccoli Slaw that combines creamy dressing with crunchy vegetables and fruits.
Ingredients
- 2 heads broccoli, including stems
- ¼ small head cabbage, thinly sliced
- 2 medium carrots, shredded
- ½ red onion, thinly sliced
- 1 Granny Smith or Golden Delicious apple
- ½ cup (60 g) dried cranberries or raisins
- ½ cup (55 g) sliced almonds, chopped pecans, or walnuts
- 2 tablespoons (8 g) fresh parsley, minced
- 1 cup (240 g) mayonnaise
- 2½ teaspoons (12.5 mL) Dijon mustard
- 2 tablespoons (30 mL) apple cider vinegar
- 2 tablespoons (30 mL) fresh lemon juice
- 3 tablespoons (38 g) granulated sugar
- 1 teaspoon (5 g) coarse salt
- ½ teaspoon (2.5 mL) freshly ground black pepper
Instructions
- Make the dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, lemon juice, sugar, salt, and black pepper until smooth.
- Prepare the vegetables: Thinly slice the cabbage and red onion. Shred the carrots.
- Prepare the apple: Peel the apple, remove the seeds, and cut it into thin matchstick-sized strips.
- Prepare the broccoli: Cut the florets from the stems and chop them into small pieces. Peel the tough outer layer from the stems, then julienne the stems into thin strips.
- Combine: Add the broccoli, cabbage, carrots, onion, apple, dried cranberries, nuts, and parsley to a large bowl.
- Dress the slaw: Pour the dressing over the vegetables and toss thoroughly until everything is evenly coated.
- Serve: Serve immediately for maximum crunch.

- For a vegan option, substitute mayonnaise with a plant-based alternative.
- Feel free to customize the nuts and dried fruits based on your preference.
- This slaw can be made a few hours in advance; however, it is best served fresh for crunchiness.
