Ingredients

  • 2 heads broccoli, including stems
  • ¼ small head cabbage, thinly sliced
  • 2 medium carrots, shredded
  • ½ red onion, thinly sliced
  • 1 Granny Smith or Golden Delicious apple
  • ½ cup (60 g) dried cranberries or raisins
  • ½ cup (55 g) sliced almonds, chopped pecans, or walnuts
  • 2 tablespoons (8 g) fresh parsley, minced
  • 1 cup (240 g) mayonnaise
  • 2½ teaspoons (12.5 mL) Dijon mustard
  • 2 tablespoons (30 mL) apple cider vinegar
  • 2 tablespoons (30 mL) fresh lemon juice
  • 3 tablespoons (38 g) granulated sugar
  • 1 teaspoon (5 g) coarse salt
  • ½ teaspoon (2.5 mL) freshly ground black pepper

Instructions

  1. Make the dressing: In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, lemon juice, sugar, salt, and black pepper until smooth.
  2. Prepare the vegetables: Thinly slice the cabbage and red onion. Shred the carrots.
  3. Prepare the apple: Peel the apple, remove the seeds, and cut it into thin matchstick-sized strips.
  4. Prepare the broccoli: Cut the florets from the stems and chop them into small pieces. Peel the tough outer layer from the stems, then julienne the stems into thin strips.
  5. Combine: Add the broccoli, cabbage, carrots, onion, apple, dried cranberries, nuts, and parsley to a large bowl.
  6. Dress the slaw: Pour the dressing over the vegetables and toss thoroughly until everything is evenly coated.
  7. Serve: Serve immediately for maximum crunch.
