Ingredients

  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts (optional)
  • 1 pint vanilla ice cream, softened
  • 1/2 cup chocolate syrup

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and cocoa powder. Set aside.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips and walnuts if using.
  5. Spread half of the brookie batter into the bottom of a greased 9×9-inch baking dish. Bake in a preheated oven at 350°F for 15-18 minutes, or until set but still soft.
