Description
Buttery Cottage Cheese Herb Rolls are soft, flavorful rolls made with cottage cheese and herbs, perfect for any meal.
Ingredients
- 2 cups all-purpose flour, plus extra as needed
- 1 cup cottage cheese
- 1 large egg
- 2 tablespoons unsalted butter, melted and slightly cooled
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon garlic powder
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried Italian herbs
- 3 tablespoons unsalted butter, melted (for topping)
- 1 clove garlic, minced (for topping)
- 1 tablespoon chopped fresh parsley (for topping)
- ½ teaspoon dried oregano (for topping)
- Pinch of salt (for topping)
Instructions
- Preheat the oven. Heat your oven to 375°F. Line a baking sheet with parchment paper.
- Prepare the cottage cheese. If the cottage cheese has a lot of liquid, drain it briefly. For a smoother texture, pulse it in a blender or food processor until creamy.
- Mix the dry ingredients. In a large bowl, whisk together the flour, sugar, baking powder, salt, garlic powder, parsley, and Italian herbs.
- Add the wet ingredients. In a separate bowl, mix the cottage cheese, egg, and melted butter until combined.
- Make the dough. Add the wet mixture to the dry ingredients. Stir until a soft dough forms. If it is very sticky, add flour 1 tablespoon at a time. Avoid adding too much, which can make the rolls dense.
- Shape the rolls. Divide the dough into 12 equal portions. Roll each portion gently into a ball and arrange on the prepared baking sheet, leaving space between them.
- Bake until golden. Bake for 18–22 minutes, or until the rolls are lightly golden on top and cooked through.
- Prepare the herb butter. While the rolls bake, combine the melted butter, minced garlic, parsley, oregano, and a pinch of salt.
- Brush and serve. Brush the warm rolls generously with the herb butter as soon as they come out of the oven. Let them rest for 5 minutes before serving.
Notes
- Blend the cottage cheese if you prefer a smoother, more uniform bread texture.
- Don’t overwork the dough. Mix only until combined to help keep the rolls tender.
- Add cheese for extra flavor. Mix in ¼ cup grated Parmesan or shredded cheddar.
- For a golden finish, brush the tops with a little beaten egg before baking.
- Store cooled rolls in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. Reheat at 300°F for 5–8 minutes, brushing with a little extra butter if desired.
