Cabbage Fried Rice is a delicious and easy recipe that combines cooked rice with fresh vegetables and seasonings for a flavorful dish.
Ingredients
- 2 cups cooked white rice (preferably day-old)
- 2 cups green cabbage, finely shredded
- 1 cup carrots, diced
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 2 large eggs, beaten (optional)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add the diced carrots and shredded cabbage to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.
- Push the vegetables to one side of the skillet. If using, pour the beaten eggs into the empty side and scramble until fully cooked. Then, mix the eggs with the vegetables.
- Add the cooked rice to the skillet, breaking up any clumps. Pour the soy sauce and sesame oil over the rice, and stir everything together. Cook for an additional 3-4 minutes, allowing the rice to heat through and absorb the flavors.
- Stir in the chopped green onions and season with salt and pepper to taste. Cook for another minute, then remove from heat.
Notes
- For added protein, consider including cooked chicken, shrimp, or tofu. Just add them in with the vegetables.
- Experiment with different vegetables like bell peppers, peas, or corn for a colorful and nutritious twist.
