Description

A delicious and easy recipe for a Cabbage & Shrimp Egg Omelette that combines fresh ingredients for a flavorful meal.

Ingredients

  • 4 large eggs
  • 6 oz peeled and deveined shrimp, chopped if large
  • 1½ cups finely shredded cabbage
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • ¼ tsp salt, or to taste
  • ¼ tsp ground black pepper
  • 1 tbsp cooking oil
  • 1 tbsp chopped green onions (optional)

Instructions

  1. Prepare the ingredients. Shred the cabbage, chop the shrimp if needed, and mince the garlic and onion.
  2. Beat the eggs. In a bowl, whisk the eggs with a pinch of salt and black pepper until well combined.
  3. Sauté the aromatics. Heat the oil in a nonstick skillet over medium heat. Add the onion and garlic and cook for 1–2 minutes until fragrant.
  4. Cook the shrimp. Add the shrimp and cook for 2–3 minutes, stirring, until pink and opaque.
  5. Add the cabbage. Stir in the shredded cabbage and soy sauce. Cook for 2–3 minutes until slightly softened but still tender-crisp.
  6. Pour in the eggs. Spread the shrimp and cabbage mixture evenly across the pan. Pour the beaten eggs over the top.
  7. Cook the omelette. Reduce the heat to medium-low. Cover and cook for 4–6 minutes, until the eggs are set and cooked through. If the omelette is thick, carefully flip it or finish cooking it covered over low heat.
  8. Garnish and serve. Sprinkle with green onions, if desired. Slice into wedges and serve warm.

Notes

  • Avoid watery cabbage: Don’t overcook it before adding the eggs.
  • Keep the heat moderate: Low to medium-low heat helps the eggs cook without burning the bottom.
  • Add extra flavor: A little sesame oil, chili flakes, or a dash of oyster sauce works well.
  • Make it a complete meal: Serve with steamed rice or enjoy it on its own.
  • Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheat gently in a skillet or microwave until hot throughout.
  • For the best texture, serve freshly cooked.
