Description
A delicious campfire dish featuring cheesy potatoes, bacon, and sausage, perfect for outdoor cooking.
Ingredients
- 2 large russet potatoes, diced
- 4 ounces bacon, chopped
- 4 ounces breakfast sausage, crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Aluminum foil
Instructions
- Preheat your campfire or grill to medium heat.
- In a skillet over the campfire, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.
- Add the crumbled sausage to the skillet and cook until browned and fully cooked.
- In a large bowl, combine the diced potatoes, cooked bacon, cooked sausage, shredded cheddar cheese, sour cream, green onions, garlic powder, onion powder, salt, and pepper. Mix well.
- Lay out a large piece of aluminum foil and spoon the potato mixture onto the center. Fold the foil over the mixture to create a sealed packet.
- Place the foil packet on the grill or over the campfire coals. Cook for about 25-30 minutes, turning occasionally, until the potatoes are tender.
- Carefully open the foil packet (watch for steam) and serve hot.
Notes
- For a smoky flavor, add a few drops of liquid smoke to the mixture before sealing the foil packet.
- You can also substitute the cheddar cheese with pepper jack for a spicy kick.
