Description

A delicious Caramel Apple Blondie Cheesecake that combines the flavors of caramel, apples, and a creamy cheesecake layer on a blondie base.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup packed brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup chopped apples (about 1 medium apple)
  • 1 teaspoon cinnamon
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup caramel sauce (plus extra for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press this mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, whisk together the brown sugar, granulated sugar, eggs, and 1 teaspoon of vanilla extract until smooth. Add the flour, baking powder, and salt, mixing until just combined. Fold in the chopped apples and cinnamon.
  4. Pour the blondie batter over the crust in the springform pan, spreading it evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool completely.
  5. While the blondie layer is cooling, prepare the cheesecake layer. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and 1 teaspoon of vanilla extract, mixing until well combined.
  6. Once the blondie layer is cool, spread the cheesecake mixture evenly over the top. Drizzle with caramel sauce and use a knife to create a swirl effect.
  7. Refrigerate the cheesecake for at least 4 hours, or overnight for best results. Before serving, drizzle additional caramel sauce on top.

Notes

  • For a nutty twist, consider adding ½ cup of chopped walnuts or pecans to the blondie batter.
  • If you prefer a spicier flavor, increase the cinnamon to 1 ½ teaspoons or add a pinch of nutmeg.
