Description

Deliciously soft and chewy cookies filled with caramel and apple, coated in cinnamon sugar.


Ingredients

  • 170 g unsalted butter, softened
  • 150 g granulated sugar
  • 100 g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 300 g all-purpose flour
  • 1 tsp cream of tartar
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 150 g apple, peeled, cored, and finely diced
  • 15 g unsalted butter
  • 25 g brown sugar
  • ½ tsp ground cinnamon
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 100 g soft caramel candies, cut into small pieces
  • 50 g granulated sugar
  • 1½ tsp ground cinnamon

Instructions

  1. Make the apple filling: Melt butter in a small skillet over medium heat. Add diced apple, brown sugar, cinnamon, and lemon juice. Cook for 4–5 minutes, until the apple softens. Stir in cornstarch and cook for 1 minute. Remove from heat and cool completely.
  2. Make the dough: Beat softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla.
  3. Add dry ingredients: In a separate bowl, whisk together flour, cream of tartar, baking soda, salt, and cinnamon. Gradually add to the butter mixture and mix just until combined.
  4. Chill: Cover the dough and refrigerate for 30 minutes.
  5. Prepare the coating: Mix the granulated sugar and cinnamon in a small bowl.
  6. Stuff the cookies: Take about 2 tablespoons of dough and flatten it slightly. Place a small spoonful of apple filling and a piece of caramel in the center. Wrap the dough completely around the filling and roll into a ball.
  7. Coat: Roll each dough ball in the cinnamon sugar.
  8. Bake: Heat oven to 175°C. Place cookies on a parchment-lined baking sheet, leaving about 5 cm between them. Bake for 10–12 minutes, until the edges are set but the centers remain soft.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
