Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups finely shredded zucchini, lightly squeezed
  • ¾ cup chopped pecans
  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • ¼ cup heavy cream or milk
  • 1 tsp vanilla extract
  • 2 cups powdered sugar
  • Pinch of salt
  • ½ cup chopped pecans, for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan and line it with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk melted butter, brown sugar, and granulated sugar. Add eggs and vanilla and mix well.
  4. Stir in the shredded zucchini.
  5. Gradually add the dry ingredients and mix just until combined. Fold in the chopped pecans.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Make the frosting: Melt butter in a saucepan over medium heat. Add brown sugar and cream. Bring to a gentle boil, stirring constantly, and cook for about 2 minutes.
  9. Remove from heat and stir in vanilla and salt. Gradually whisk in powdered sugar until smooth.
  10. Spread the warm caramel frosting over the cooled zucchini bars.
  11. Sprinkle with chopped pecans. Let the frosting set before slicing.
