Description

Ingredients

  • 120 g all-purpose flour
  • 1 teaspoon (5 mL) baking powder
  • ¼ teaspoon (1.25 mL) salt
  • 4 large eggs, room temperature
  • 150 g granulated sugar
  • 1 teaspoon (5 mL) vanilla extract
  • 30 mL whole milk
  • 30 g unsalted butter, melted
  • 225 g cream cheese, softened
  • 60 g unsalted butter, softened
  • 120 g caramel sauce
  • 60 g powdered sugar
  • 1 teaspoon (5 mL) vanilla extract
  • 100 g finely chopped toasted pecans
  • ½ teaspoon (2.5 mL) ground cinnamon, optional
  • Pinch of salt
  • 100 g caramel sauce (for topping)
  • 60 g toasted pecans, roughly chopped (for topping)
  • Powdered sugar, optional (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 25 × 38 cm (10 × 15-inch) jelly-roll pan with parchment paper. Lightly grease the parchment.
  2. Whisk together the flour, baking powder, and salt.
  3. Using an electric mixer, beat the eggs and sugar on high speed for 4–5 minutes, until very pale, thick, and fluffy. Beat in the vanilla.
  4. Gently fold the flour mixture into the egg mixture in two or three additions.
  5. Mix the melted butter with the milk. Gently fold into the batter just until incorporated. Don’t overmix.
  6. Spread the batter evenly in the prepared pan. Bake for 10–13 minutes, or until the cake springs back lightly when touched.
  7. Immediately dust a clean kitchen towel generously with powdered sugar. Carefully turn the hot cake onto the towel and peel away the parchment.
  8. Starting at one short end, gently roll the cake with the towel inside. Let it cool completely while rolled. This helps prevent cracking.
