Description

A delicious and decadent Caramel Walnut Cream Cake that combines rich flavors of caramel and walnuts with a creamy frosting.


Ingredients

  • 250 g all-purpose flour
  • 200 g granulated sugar
  • 170 g unsalted butter, softened
  • 3 large eggs
  • 180 ml buttermilk
  • 5 ml vanilla extract
  • 10 g baking powder
  • 2 g baking soda
  • 2 g salt
  • 100 g chopped walnuts
  • 225 g cream cheese, softened
  • 115 g unsalted butter, softened
  • 180 g powdered sugar
  • 5 ml vanilla extract
  • 1530 ml heavy cream, as needed
  • 150 g caramel sauce
  • 80 g chopped walnuts

Instructions

  1. Preheat oven to 175°C. Grease and line two 20 cm round cake pans with parchment paper.
  2. Beat butter and sugar for 3–4 minutes, until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Add the dry ingredients to the butter mixture alternately with the buttermilk. Mix just until combined. Fold in the chopped walnuts.
  5. Divide the batter between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the centre comes out clean.
  6. Cool in the pans for 10 minutes, then transfer to a wire rack and cool completely.
  7. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Add heavy cream a little at a time until smooth and spreadable.
  8. Place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting over the top. Add the second cake layer and frost the top and sides.
  9. Press the chopped walnuts around the sides of the cake.
  10. Spoon caramel sauce over the top and spread gently toward the edges. Add extra caramel in a spiral pattern, then sprinkle with walnut pieces.
  11. Refrigerate for 30–60 minutes before slicing to help the layers set.
