Description
A delicious and decadent Caramel Walnut Cream Cake that combines rich flavors of caramel and walnuts with a creamy frosting.
Ingredients
- 250 g all-purpose flour
- 200 g granulated sugar
- 170 g unsalted butter, softened
- 3 large eggs
- 180 ml buttermilk
- 5 ml vanilla extract
- 10 g baking powder
- 2 g baking soda
- 2 g salt
- 100 g chopped walnuts
- 225 g cream cheese, softened
- 115 g unsalted butter, softened
- 180 g powdered sugar
- 5 ml vanilla extract
- 15–30 ml heavy cream, as needed
- 150 g caramel sauce
- 80 g chopped walnuts
Instructions
- Preheat oven to 175°C. Grease and line two 20 cm round cake pans with parchment paper.
- Beat butter and sugar for 3–4 minutes, until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in vanilla.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add the dry ingredients to the butter mixture alternately with the buttermilk. Mix just until combined. Fold in the chopped walnuts.
- Divide the batter between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted into the centre comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack and cool completely.
- Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Add heavy cream a little at a time until smooth and spreadable.
- Place one cake layer on a serving plate. Spread a generous layer of cream cheese frosting over the top. Add the second cake layer and frost the top and sides.
- Press the chopped walnuts around the sides of the cake.
- Spoon caramel sauce over the top and spread gently toward the edges. Add extra caramel in a spiral pattern, then sprinkle with walnut pieces.
- Refrigerate for 30–60 minutes before slicing to help the layers set.

- Ensure all ingredients are at room temperature for best results.
- Adjust the amount of heavy cream in the frosting to achieve desired consistency.
- For a richer flavor, use homemade caramel sauce.
