Ingredients

  • 2 ripe peaches, pitted and sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon
  • 8 slices of sourdough bread
  • 8 ounces Brie cheese, sliced
  • 4 tablespoons honey
  • Fresh arugula or spinach (optional)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt the butter. Add the sliced peaches, brown sugar, and cinnamon. Cook for about 5-7 minutes, stirring occasionally, until the peaches are soft and caramelized. Remove from heat and set aside.
  2. Preheat a griddle or non-stick skillet over medium heat.
  3. Assemble the sandwiches by spreading honey on one side of each slice of bread. On the un-honeyed side, layer slices of Brie cheese, followed by the caramelized peaches. If using, add a handful of fresh arugula or spinach. Top with another slice of bread, honey side up.
  4. Place the assembled sandwiches on the preheated griddle. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. You may need to press down lightly with a spatula to ensure even grilling.
  5. Remove from the skillet, slice in half, and serve warm. Season with a pinch of salt and pepper if desired.
