A delicious and unique dessert that combines the flavors of carrot cake with a gooey, caramel-like sauce.
Ingredients
- 190 g all-purpose flour
- 2 teaspoons (10 mL) baking powder
- ¼ teaspoon (1.25 mL) salt
- 150 g granulated sugar
- 1 teaspoon (5 mL) ground cinnamon
- ½ teaspoon (2.5 mL) ground nutmeg
- ¼ teaspoon (1.25 mL) ground cloves
- 120 g unsweetened applesauce
- 120 mL whole milk
- 60 g unsalted butter, melted
- 1 teaspoon (5 mL) vanilla extract
- 150 g finely grated carrots
- 60 g chopped pecans or walnuts
- 100 g granulated sugar (for topping)
- 100 g packed brown sugar (for topping)
- 75 g chopped pecans or walnuts (for topping)
- 360 mL very hot water (for saucy layer)
Instructions
- Preheat the oven: Heat oven to 350°F (175°C). Grease an 8-inch (20 cm) high-sided rectangular baking dish.
- Mix the dry ingredients: In a large bowl, whisk together flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves.
- Mix the wet ingredients: In another bowl, combine applesauce, milk, melted butter, vanilla, and finely grated carrots.
- Make the batter: Pour the wet mixture into the dry ingredients. Gently fold until just combined. Don’t overmix.
- Transfer: Spread the batter evenly into the prepared baking dish.
- Make the topping: Combine the granulated sugar, brown sugar, and chopped pecans. Sprinkle evenly over the batter.
- Add the hot water: Carefully pour the very hot water over the entire surface. Do not stir.
- Bake: Place the dish on a baking sheet to catch any overflow. Bake for 40–50 minutes, until the top is golden and the center is set.
- Rest: Let the cobbler cool for 5–10 minutes so the saucy layer can settle.
- Serve: Spoon the warm cobbler into bowls and serve with vanilla ice cream, whipped cream, or a drizzle of caramel sauce.
Notes
- Ensure not to stir the hot water into the batter for the best texture.
