Ingredients

  • For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • For the Cookie Dough
  • ½ cup unsalted butter, softened
  • ¾ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1¾ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup white chocolate chips or semi-sweet chocolate chips

Instructions

  1. Make the cheesecake filling: Beat the softened cream cheese, powdered sugar, and vanilla until completely smooth.
  2. Scoop the filling into 12 small portions onto a parchment-lined plate or baking sheet. Freeze for at least 30 minutes, or until firm.
  3. Make the cookie dough: In a large bowl, beat the butter, brown sugar, and granulated sugar until light and creamy, about 2–3 minutes.
  4. Add the egg and vanilla and mix until combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until a soft dough forms.
  6. Fold in the chocolate chips.
  7. Stuff the cookies: Scoop about 2 tablespoons of dough and flatten it slightly. Place one frozen cheesecake portion in the center.
  8. Cover completely with another tablespoon of dough and pinch the edges together to seal the filling inside. Roll gently into a ball.
  9. Place the stuffed cookie dough balls on a parchment-lined baking sheet, leaving about 2 inches between each cookie.
  10. Bake: Preheat oven to 350°F. Bake for 11–14 minutes, or until the edges are lightly golden while the centers still look slightly soft.
  11. Cool: Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.
  12. Serve: Enjoy warm for a soft cheesecake center or refrigerate them for a firmer, cheesecake-like filling.
