Ingredients

  • 8 spring roll wrappers or egg roll wrappers
  • 1 cup shredded cabbage
  • 1 small carrot, grated
  • ½ cup bell pepper, finely chopped
  • ½ cup mushrooms, finely chopped
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded cheddar cheese
  • 2 green onions, chopped
  • 1 clove garlic, minced
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • 1 egg, beaten, for sealing
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • Salt, to taste

Instructions

  1. Prepare the vegetables: Heat olive oil in a skillet over medium heat. Add garlic, cabbage, carrot, bell pepper, mushrooms, and green onions. Cook for 3–5 minutes, until slightly softened. Season with Italian seasoning, salt, and pepper.
  2. Cool the filling: Remove from heat and allow the vegetables to cool slightly. Stir in the mozzarella and cheddar.
  3. Fill the wrappers: Place a wrapper on a clean surface. Add about 2 tablespoons of the vegetable-cheese mixture near one edge.
  4. Roll: Fold in the sides and roll tightly. Brush the final edge with beaten egg to seal.
  5. Bake: Arrange the rolls seam-side down on a parchment-lined baking sheet. Lightly brush or spray with oil. Bake at 400°F (200°C) for 18–22 minutes, turning once halfway through, until golden and crisp.
  6. Make the dip: Whisk mayonnaise, sour cream, lemon juice, garlic powder, parsley, black pepper, and salt until smooth.
  7. Serve: Let the rolls cool for a few minutes, then serve warm with the creamy dip.

  • For a spicier kick, add some chopped jalapeños to the vegetable mixture.
