Delicious cheesy baked vegetable rolls served with a creamy dip, perfect for appetizers or snacks.
Ingredients
- 8 spring roll wrappers or egg roll wrappers
- 1 cup shredded cabbage
- 1 small carrot, grated
- ½ cup bell pepper, finely chopped
- ½ cup mushrooms, finely chopped
- ½ cup shredded mozzarella cheese
- ¼ cup shredded cheddar cheese
- 2 green onions, chopped
- 1 clove garlic, minced
- ½ teaspoon Italian seasoning
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- 1 tablespoon olive oil
- 1 egg, beaten, for sealing
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- ½ teaspoon dried parsley
- ¼ teaspoon black pepper
- Salt, to taste
Instructions
- Prepare the vegetables: Heat olive oil in a skillet over medium heat. Add garlic, cabbage, carrot, bell pepper, mushrooms, and green onions. Cook for 3–5 minutes, until slightly softened. Season with Italian seasoning, salt, and pepper.
- Cool the filling: Remove from heat and allow the vegetables to cool slightly. Stir in the mozzarella and cheddar.
- Fill the wrappers: Place a wrapper on a clean surface. Add about 2 tablespoons of the vegetable-cheese mixture near one edge.
- Roll: Fold in the sides and roll tightly. Brush the final edge with beaten egg to seal.
- Bake: Arrange the rolls seam-side down on a parchment-lined baking sheet. Lightly brush or spray with oil. Bake at 400°F (200°C) for 18–22 minutes, turning once halfway through, until golden and crisp.
- Make the dip: Whisk mayonnaise, sour cream, lemon juice, garlic powder, parsley, black pepper, and salt until smooth.
- Serve: Let the rolls cool for a few minutes, then serve warm with the creamy dip.
Notes
- For a spicier kick, add some chopped jalapeños to the vegetable mixture.
- These rolls can be made ahead of time and frozen before baking.
