Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 small zucchini, julienned
  • 1 small red bell pepper, thinly sliced
  • 1 cup finely shredded cabbage
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • 10 spring roll wrappers
  • 2 tablespoons melted butter or olive oil, for brushing
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sauté the onion and garlic for 1–2 minutes.
  3. Add the carrot, zucchini, bell pepper, and cabbage. Season with salt, black pepper, and Italian seasoning. Cook for 4–5 minutes, stirring occasionally, until the vegetables are tender but not soggy.
  4. Remove from the heat and let the vegetables cool slightly. Stir in the mozzarella and cheddar cheese.
  5. Place one spring roll wrapper on a clean surface. Spoon about 2–3 tablespoons of filling near one edge.
  6. Fold in the sides and roll tightly, sealing the edge with a little water. Repeat with the remaining wrappers and filling.
  7. Arrange the rolls seam-side down on the prepared baking sheet.
  8. Brush the tops lightly with melted butter or olive oil and sprinkle with Parmesan cheese.
  9. Bake for 18–22 minutes, turning once halfway through, until golden brown and crisp.
  10. Serve hot with marinara sauce, ranch dressing, or your favorite dipping sauce.
