A delicious low-carb dish featuring broccoli and cottage cheese, topped with cheddar and Parmesan for a cheesy delight.
Ingredients
- 450 g broccoli florets, fresh or frozen
- 250 g cottage cheese
- 2 large eggs
- 100 g shredded cheddar cheese, divided
- 30 g grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes, optional
- 1 tablespoon fresh chopped parsley, optional
Instructions
- Preheat the oven to 190°C.
- Steam the broccoli until just tender, about 4–5 minutes. If using frozen broccoli, thaw it completely. Drain extremely well and pat dry with paper towels.
- In a large bowl, whisk together the cottage cheese and eggs. Add 50 g cheddar, Parmesan, garlic powder, onion powder, Italian seasoning, salt, black pepper, and red pepper flakes, if using. Mix until well combined.
- Chop the broccoli into bite-sized pieces and gently fold it into the cottage cheese mixture.
- Lightly grease a 20 × 20 cm baking dish. Pour the mixture into the dish and spread evenly. Sprinkle the remaining 50 g cheddar cheese over the top.
- Bake uncovered for 25–30 minutes, or until the center is set and the cheese on top is golden and bubbling. For a more deeply browned top, switch to the grill/broiler for 1–2 minutes, watching carefully.
- Remove from the oven and let it rest for 5–10 minutes before slicing. Garnish with fresh parsley and serve warm.
