Description
Cheesy Crispy Potato Bites are delicious, golden, and crispy snacks filled with gooey cheese, perfect for any occasion.
Ingredients
- 500 g potatoes, peeled and cubed
- 1 cup (100 g) shredded cheddar cheese
- ½ cup (50 g) grated Parmesan cheese
- ¼ cup (30 g) finely chopped green onions or chives
- 1 large egg, beaten
- ⅓ cup (40 g) all-purpose flour
- ½ teaspoon (2.5 mL) garlic powder
- ½ teaspoon (2.5 mL) paprika
- ½ teaspoon (2.5 mL) salt
- ¼ teaspoon (1.25 mL) black pepper
- 100 g mozzarella cheese, cut into small cubes
- 1 cup (100 g) panko breadcrumbs
- Vegetable oil, for frying
Instructions
- Cook the potatoes: Place the potatoes in a saucepan and cover with cold water. Bring to a boil and cook for 15–20 minutes, or until fork-tender. Drain well.
- Mash: Transfer the potatoes to a bowl and mash until smooth. Allow them to cool slightly.
- Make the mixture: Add cheddar, Parmesan, green onions, egg, flour, garlic powder, paprika, salt, and black pepper. Mix until everything is well combined.
- Form the bites: Scoop about 1½ tablespoons (25 g) of the potato mixture. Flatten it slightly, place a cube of mozzarella in the center, then carefully roll into a ball, making sure the cheese is completely enclosed.
- Coat: Roll each potato ball in the panko breadcrumbs, pressing gently so the coating sticks.
- Chill: Refrigerate the coated bites for 15–20 minutes. This helps them hold their shape while cooking.
- Fry: Heat about 5 cm of vegetable oil in a deep skillet to 175°C. Fry the potato bites in batches for 2–3 minutes, turning occasionally, until golden and crispy.
- Drain: Transfer to a paper-towel-lined plate to remove excess oil.
- Serve: Serve immediately while the centers are hot and cheesy. They’re especially good with garlic aioli, ranch dressing, marinara, or spicy mayo.
- Air-fryer option: Spray the bites lightly with oil and air-fry at 200°C for 10–12 minutes, turning halfway, until golden and crisp.

- For a healthier option, consider air-frying instead of deep-frying.
- These bites can be made ahead of time and frozen before frying.
