Description

Cheesy Crispy Potato Bites are delicious, golden, and crispy snacks filled with gooey cheese, perfect for any occasion.


Ingredients

  • 500 g potatoes, peeled and cubed
  • 1 cup (100 g) shredded cheddar cheese
  • ½ cup (50 g) grated Parmesan cheese
  • ¼ cup (30 g) finely chopped green onions or chives
  • 1 large egg, beaten
  • ⅓ cup (40 g) all-purpose flour
  • ½ teaspoon (2.5 mL) garlic powder
  • ½ teaspoon (2.5 mL) paprika
  • ½ teaspoon (2.5 mL) salt
  • ¼ teaspoon (1.25 mL) black pepper
  • 100 g mozzarella cheese, cut into small cubes
  • 1 cup (100 g) panko breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. Cook the potatoes: Place the potatoes in a saucepan and cover with cold water. Bring to a boil and cook for 15–20 minutes, or until fork-tender. Drain well.
  2. Mash: Transfer the potatoes to a bowl and mash until smooth. Allow them to cool slightly.
  3. Make the mixture: Add cheddar, Parmesan, green onions, egg, flour, garlic powder, paprika, salt, and black pepper. Mix until everything is well combined.
  4. Form the bites: Scoop about 1½ tablespoons (25 g) of the potato mixture. Flatten it slightly, place a cube of mozzarella in the center, then carefully roll into a ball, making sure the cheese is completely enclosed.
  5. Coat: Roll each potato ball in the panko breadcrumbs, pressing gently so the coating sticks.
  6. Chill: Refrigerate the coated bites for 15–20 minutes. This helps them hold their shape while cooking.
  7. Fry: Heat about 5 cm of vegetable oil in a deep skillet to 175°C. Fry the potato bites in batches for 2–3 minutes, turning occasionally, until golden and crispy.
  8. Drain: Transfer to a paper-towel-lined plate to remove excess oil.
  9. Serve: Serve immediately while the centers are hot and cheesy. They’re especially good with garlic aioli, ranch dressing, marinara, or spicy mayo.
  10. Air-fryer option: Spray the bites lightly with oil and air-fry at 200°C for 10–12 minutes, turning halfway, until golden and crisp.
