Description
A delicious and comforting dish featuring roasted cauliflower topped with a rich French onion sauce and a blend of cheeses.
Ingredients
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp unsalted butter
- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 1 tsp brown sugar
- 1 tsp fresh thyme leaves
- 1/2 cup beef broth
- 1 tsp Worcestershire sauce
- 1/4 tsp black pepper
- 1 cup shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley, optional
Instructions
- Preheat the oven: Set the oven to 400°F. Lightly grease a 9×13-inch baking dish.
- Season the cauliflower: Place the cauliflower florets in a large bowl. Toss with olive oil, garlic powder, salt, and black pepper until evenly coated.
- Roast the cauliflower: Spread the florets in the prepared baking dish and roast for 20–25 minutes, until beginning to soften and develop golden edges.
- Caramelize the onions: While the cauliflower roasts, melt the butter in a large skillet over medium-low heat. Add the sliced onions and cook for 20–25 minutes, stirring occasionally, until deeply golden and caramelized.
- Make the French onion sauce: Stir in the minced garlic, brown sugar, thyme, and black pepper. Cook for 30 seconds, then add the beef broth and Worcestershire sauce. Simmer for 3–5 minutes until slightly reduced.
- Combine everything: Remove the cauliflower from the oven. Pour the caramelized onion mixture over the florets and gently toss to coat.
- Add the cheese: Sprinkle the Gruyère, mozzarella, and Parmesan evenly over the cauliflower.
- Bake until bubbly: Return the dish to the oven and bake for another 10–15 minutes, until the cheese is melted, golden, and bubbling.
- Garnish and serve: Let rest for 5 minutes, then sprinkle with fresh parsley if desired.
Notes
- Cook the onions slowly for the richest French onion flavor.
- Drain excess liquid from the cauliflower if needed to keep the dish from becoming watery.
- For a vegetarian version, use vegetable broth instead of beef broth and vegetarian Worcestershire sauce.
- Serve this cheesy cauliflower bake as a comforting side dish with roasted chicken, steak, or grilled salmon.
