Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 medium russet potatoes, thinly sliced
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup sour cream
  • ½ cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley, optional

Instructions

  1. Preheat: Heat oven to 375°F. Lightly grease a 9 × 13-inch baking dish.
  2. Cook the beef: Brown the ground beef and onion in a large skillet over medium-high heat for 6–8 minutes. Drain excess grease. Add garlic, Worcestershire sauce, paprika, salt, and pepper. Cook for 1 minute.
  3. Make the sauce: In a bowl, whisk together cream of mushroom soup, sour cream, and milk until smooth.
  4. Layer: Arrange half of the sliced potatoes in the baking dish. Spread half of the beef mixture over the potatoes, followed by half of the soup mixture and 1 cup of cheddar cheese.
  5. Repeat: Add the remaining potatoes, beef, soup mixture, and cheddar. Finish with the mozzarella.
  6. Bake covered: Cover tightly with foil and bake for 50–55 minutes, until the potatoes are tender.
  7. Brown the cheese: Remove the foil and bake for another 15–20 minutes, until the cheese is golden and bubbling.
  8. Rest: Let the casserole rest for 10 minutes before serving. Garnish with parsley if desired.

  • For a spicier version, add some diced jalapeños to the beef mixture.
  • Feel free to substitute the ground beef with ground turkey for a lighter option.
