Description

Cheesy Mashed Potato Puffs are a delicious and easy-to-make appetizer that combines creamy mashed potatoes with sharp cheddar cheese and spices, baked to golden perfection.

Ingredients

  • 2 cups cold mashed potatoes
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • ¼ cup sour cream
  • ¼ cup all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons chopped green onions
  • 2 cloves garlic, minced
  • ½ teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • 2 tablespoons grated Parmesan cheese
  • Cooking spray or butter, for greasing the muffin pan
  • Optional Toppings: ¼ cup extra shredded cheddar cheese, 2 tablespoons crumbled cooked bacon, 1 tablespoon chopped fresh parsley, Sour cream or ranch dressing, for dipping

Instructions

  1. Preheat your oven to 400°F. Generously grease a 12-cup muffin pan with cooking spray or butter.
  2. In a large mixing bowl, combine the cold mashed potatoes, shredded cheddar cheese, eggs, sour cream, melted butter, flour, green onions, minced garlic, salt, black pepper, garlic powder, smoked paprika, and Parmesan cheese. Stir until evenly combined.
  3. Spoon the potato mixture into the prepared muffin cups, filling each about three-quarters full. Gently press the mixture into each cup.
  4. Bake for 25–30 minutes, or until the tops are golden brown and the centers are set. For mini puffs, check after 15–20 minutes.
  5. Remove the pan from the oven and let the potato puffs rest for 5–10 minutes before removing them.
  6. Sprinkle with chopped parsley or additional green onions and serve warm with dipping sauce.

Notes

  • For smaller appetizer-sized puffs, use a mini muffin pan and reduce the baking time.
  • If your mashed potatoes are heavily seasoned, taste the mixture before adding extra salt.
  • For a deeper golden crust, broil for the final 1–2 minutes, watching carefully.
