Ingredients

  • 1 pound ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the ground beef, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined, then form into small meatballs, about 1 inch in diameter.
  2. In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the pot and set aside.
  3. In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  4. Pour in the beef broth and diced tomatoes, bringing the mixture to a simmer. Return the meatballs to the pot and let simmer for 10 minutes.
  5. Stir in the heavy cream and bring the soup back to a gentle simmer. Add the tortellini and cook according to package instructions, usually about 3-5 minutes.
  6. Once the tortellini is cooked, stir in the mozzarella cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.
  7. Serve hot, garnished with chopped parsley.

Notes

  • For a lighter version, substitute ground turkey for the beef and use half-and-half instead of heavy cream.
