Ingredients
- 1 pound ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup heavy cream
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- In a large bowl, combine the ground beef, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until well combined, then form into small meatballs, about 1 inch in diameter.
- In a large pot, heat the olive oil over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the pot and set aside.
- In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Pour in the beef broth and diced tomatoes, bringing the mixture to a simmer. Return the meatballs to the pot and let simmer for 10 minutes.
- Stir in the heavy cream and bring the soup back to a gentle simmer. Add the tortellini and cook according to package instructions, usually about 3-5 minutes.
- Once the tortellini is cooked, stir in the mozzarella cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with chopped parsley.
Notes
- For a lighter version, substitute ground turkey for the beef and use half-and-half instead of heavy cream.
- Add spinach or kale during the last few minutes of cooking for extra nutrients and color.
