Description

Cheesy Mini Pizza Muffins are a delightful snack that combines the flavors of pizza in a convenient muffin form, perfect for parties or a quick bite.

Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup pizza sauce
  • 1/2 cup mini pepperoni slices or chopped regular pepperoni
  • 1/4 cup finely diced bell pepper
  • 2 tbsp finely chopped onion, optional
  • 1/2 cup shredded mozzarella cheese, for topping
  • Extra pizza sauce for dipping
  • Chopped fresh parsley or basil, optional

Instructions

  1. Preheat your oven to 375°F. Lightly grease a 12-cup mini muffin pan with cooking spray or a little olive oil.
  2. In a large mixing bowl, whisk together the flour, baking powder, garlic powder, Italian seasoning, and salt until evenly combined.
  3. In a separate bowl, whisk the egg, milk, and olive oil until smooth. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Avoid overmixing, as this can make the muffins dense.
  4. Fold in the 1/2 cup mozzarella and Parmesan cheese, followed by the pepperoni, bell pepper, and onion if using. Gently fold in the pizza sauce until the mixture is lightly streaked with red. Do not overmix.
  5. Divide the batter evenly among the prepared mini muffin cups, filling each about three-quarters full. Sprinkle the remaining mozzarella cheese over the tops for a delicious, cheesy finish.
  6. Bake for 15–18 minutes, or until the muffins are puffed, the cheese is melted, and a toothpick inserted into the center comes out without wet batter. Allow the muffins to cool in the pan for about 5 minutes before carefully removing them.
  7. Arrange the mini pizza muffins on a serving plate. Garnish with chopped parsley or basil if desired. Serve warm with extra pizza sauce for dipping.

Notes

  • For a vegetarian option, omit the pepperoni.
  • These muffins can be stored in an airtight container for up to 3 days.
  • Feel free to customize the toppings based on your preferences.
