Description

Delicious and cheesy spinach roll-ups made with three types of cheese, perfect for a comforting meal.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 1½ cups shredded mozzarella cheese, divided
  • ½ cup grated Parmesan cheese
  • 10 oz frozen chopped spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cups marinara sauce
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat oven to 375°F. Lightly grease a 9×13-inch baking dish.
  2. Cook the lasagna noodles according to the package directions until just tender. Drain and lay them flat on a clean surface so they don’t stick together.
  3. In a large bowl, combine ricotta, 1 cup mozzarella, Parmesan, spinach, garlic, egg, Italian seasoning, salt, and black pepper. Mix until well combined.
  4. Spread about ⅓ cup of the cheese-spinach mixture evenly over each lasagna noodle.
  5. Starting from one short end, carefully roll each noodle into a tight spiral.
  6. Spread about 1 cup marinara sauce over the bottom of the baking dish. Arrange the roll-ups seam-side down.
  7. Spoon the remaining marinara sauce over the tops, then sprinkle with the remaining ½ cup mozzarella.
  8. Cover with foil and bake for 20 minutes.
  9. Remove the foil and bake for another 10–15 minutes, until the cheese is melted, bubbly, and lightly golden.
  10. Let rest for 5 minutes before serving. Garnish with fresh parsley and extra Parmesan if desired.

Notes

  • Make sure to squeeze out excess moisture from the spinach to prevent a watery filling.
  • Feel free to add other vegetables or spices to the cheese mixture for extra flavor.
