Cheesy Zucchini Boats are a delicious and easy-to-make dish that combines zucchini with a creamy cheese filling, perfect for a healthy appetizer or side dish.
Ingredients
- 4 medium zucchini
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ¼ cup finely chopped onion
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- 2 tbsp breadcrumbs
- 1 tbsp chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Slice the zucchini in half lengthwise. Use a spoon to scoop out the center, leaving about ¼ inch of zucchini around the edges. Chop the scooped-out zucchini.
- Heat olive oil in a skillet over medium heat. Sauté the onion for 2–3 minutes, then add garlic and chopped zucchini. Cook for another 3–4 minutes.
- In a bowl, combine the cooked zucchini mixture, cream cheese, ½ cup mozzarella, Parmesan, Italian seasoning, salt, and pepper.
- Spoon the cheesy mixture evenly into the zucchini shells.
- Sprinkle the remaining mozzarella and breadcrumbs over the tops.
- Bake for 20–25 minutes, until the zucchini is tender and the cheese is melted and golden.
- Garnish with fresh parsley and serve warm.
Notes
- Feel free to add other vegetables or proteins to the filling for extra flavor.
- These can be made ahead of time and baked just before serving.
