Ingredients

  • 500 g boneless, skinless chicken breasts, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 medium zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • ½ cup chicken broth
  • 1 tablespoon butter
  • 1 tablespoon fresh parsley, chopped
  • ½ lemon, juiced

Instructions

  1. Season the chicken: Place the chicken pieces in a bowl and season with paprika, oregano, thyme, garlic powder, salt, and black pepper.
  2. Brown the chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, turning occasionally, until browned and cooked through. Transfer to a plate.
  3. Sauté the vegetables: Add the remaining olive oil to the same skillet. Add the onion and carrots and cook for about 3 minutes.
  4. Add the bell pepper, zucchini, and broccoli. Cook for another 4–5 minutes, stirring occasionally, until the vegetables are tender-crisp.
  5. Add the garlic: Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  6. Combine: Return the cooked chicken to the skillet. Pour in the chicken broth and stir, scraping up any browned bits from the bottom.
  7. Add the cherry tomatoes and butter. Cook for 2–3 minutes, allowing the broth to reduce slightly and coat the chicken and vegetables.
  8. Finish: Turn off the heat and squeeze fresh lemon juice over everything. Sprinkle with chopped parsley.
  9. Serve: Serve immediately with steamed rice, mashed potatoes, quinoa, or warm crusty bread.
