Ingredients

  • 1 ½ lbs boneless, skinless chicken thighs, cut into bite-size pieces
  • 2 medium eggplants, diced
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup diced tomatoes
  • ½ cup chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp black pepper
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Prepare the eggplant: Cut the eggplant into bite-size pieces. Sprinkle lightly with salt and let sit for 10 minutes. Pat dry with paper towels.
  2. Brown the chicken: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–7 minutes, until browned and nearly cooked through. Transfer to a plate.
  3. Cook the vegetables: Add the remaining olive oil. Add eggplant and onion and cook for 5–6 minutes, until the eggplant begins to soften. Stir in the bell pepper and garlic and cook for another 2 minutes.
  4. Make the sauce: Add diced tomatoes, chicken broth, soy sauce, oyster sauce, tomato paste, Italian seasoning, paprika, and black pepper. Stir well.
  5. Combine: Return the chicken to the skillet. Cover and simmer for 8–10 minutes, until the chicken is fully cooked and the eggplant is tender.
  6. Add cheese: Sprinkle mozzarella and Parmesan evenly over the top. Cover for 2–3 minutes, until the cheese melts. For a golden top, transfer to a broiler-safe dish and broil for 1–2 minutes.
  7. Garnish: Sprinkle with fresh parsley.
  8. Serve: Serve hot with steamed rice, crusty bread, or pasta.
