A rich and indulgent Chocolate Caramel Pecan Cake topped with a luscious caramel sauce and chocolate ganache, perfect for any occasion.
Ingredients
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- ¾ cup buttermilk
- ¾ cup hot coffee or hot water
- ½ cup unsalted butter (for caramel)
- 1 cup brown sugar
- ½ cup heavy cream (for caramel)
- 1 tsp vanilla extract (for caramel)
- Pinch of salt (for caramel)
- 1 cup semisweet chocolate chips
- ½ cup heavy cream (for chocolate topping)
- 1 tbsp butter (for chocolate topping)
- 1 cup toasted pecans, roughly chopped
- Extra caramel sauce, for drizzling
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add eggs, oil, vanilla, and buttermilk. Mix until combined.
- Slowly stir in the hot coffee or water. The batter will be thin.
- Pour into the prepared pan and bake for 28–33 minutes, or until a toothpick comes out with a few moist crumbs.
- Let the cake cool for about 15 minutes. Poke holes all over the cake with the handle of a wooden spoon.
- Make the caramel: Melt butter in a saucepan. Add brown sugar, heavy cream, vanilla, and salt. Simmer for 2–3 minutes, stirring constantly.
- Pour about half of the warm caramel over the cake, allowing it to soak into the holes.
- Make the chocolate topping: Heat the heavy cream until steaming, pour over the chocolate chips, and let sit for 2 minutes. Stir until smooth, then mix in the butter.
- Spread the chocolate topping over the cake.
- Sprinkle generously with toasted pecans and drizzle with the remaining caramel.
- Chill for 30–60 minutes before slicing.

- Ensure the cake is completely cooled before adding the toppings for best results.
- For a richer flavor, use dark chocolate chips in the chocolate topping.
- Store leftovers in an airtight container in the refrigerator.
