A delicious and indulgent Chocolate Payday Pie topped with a crunchy peanut topping, perfect for dessert lovers.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup unsweetened cocoa powder
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 cup semi-sweet chocolate chips
- 1 cup heavy cream
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup salted peanuts, roughly chopped
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F.
- In a medium bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
- Bake for 10 minutes, then remove from the oven and let cool completely.
- In a saucepan over medium heat, combine chocolate chips and heavy cream. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and let cool slightly.
- In a separate bowl, mix together peanut butter, vanilla extract, and salt until smooth.
- Gradually fold the chocolate mixture into the peanut butter mixture until fully combined.
- Pour the chocolate-peanut butter filling into the cooled crust, spreading it evenly.
- Refrigerate the pie for at least 4 hours or until set.
- Before serving, whip the chopped salted peanuts with powdered sugar in a small bowl until well combined.
- Sprinkle the peanut topping over the chilled pie. Slice and serve.
