Description

A delicious and indulgent Chocolate Payday Pie topped with a crunchy peanut topping, perfect for dessert lovers.

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup salted peanuts, roughly chopped
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F.
  2. In a medium bowl, combine graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
  4. Bake for 10 minutes, then remove from the oven and let cool completely.
  5. In a saucepan over medium heat, combine chocolate chips and heavy cream. Stir until the chocolate is melted and the mixture is smooth. Remove from heat and let cool slightly.
  6. In a separate bowl, mix together peanut butter, vanilla extract, and salt until smooth.
  7. Gradually fold the chocolate mixture into the peanut butter mixture until fully combined.
  8. Pour the chocolate-peanut butter filling into the cooled crust, spreading it evenly.
  9. Refrigerate the pie for at least 4 hours or until set.
  10. Before serving, whip the chopped salted peanuts with powdered sugar in a small bowl until well combined.
  11. Sprinkle the peanut topping over the chilled pie. Slice and serve.

Notes

  • For a richer flavor, try adding a tablespoon of espresso powder to the chocolate mixture.
  • You can substitute creamy peanut butter with crunchy peanut butter for added texture.
