Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup creamy peanut butter
  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ¾ cup heavy cream
  • 2 tablespoons unsalted butter
  • ½ cup mini peanut butter cups, chopped (optional)
  • ¼ cup mini chocolate chips (optional)
  • ¼ cup roasted peanuts, chopped (optional)
  • Chocolate syrup (optional)
  • Peanut butter drizzle (optional)
  • Flaky sea salt (optional)

Instructions

  1. Preheat the oven to 350°F and grease and flour a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla, then beat until smooth.
  4. Slowly stir in the hot coffee until the batter is thin, then pour into the prepared pan.
  5. Bake for 35–40 minutes, or until a toothpick comes out with a few moist crumbs. Cool for 15 minutes.
  6. In a medium bowl, beat together peanut butter, cream cheese, powdered sugar, heavy cream, and vanilla until smooth and fluffy.
  7. Spread the peanut butter filling evenly over the slightly warm cake.
  8. For the ganache, place chocolate chips in a heatproof bowl. Heat heavy cream until it simmers, then pour over chocolate chips and let sit for 2 minutes. Stir until smooth and mix in butter until glossy.
  9. Pour the ganache evenly over the peanut butter layer.
  10. Top with chopped peanut butter cups, mini chocolate chips, and chopped peanuts. Drizzle with chocolate syrup and melted peanut butter if desired, and sprinkle with flaky sea salt.
  11. Allow the cake to rest for 20–30 minutes before slicing. For an extra gooey dessert, microwave individual slices for 10–15 seconds before serving.
