A rich and indulgent dessert combining chocolate cake with a creamy peanut butter filling, topped with a luscious chocolate ganache.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee (or hot water)
- 1 cup creamy peanut butter
- 4 ounces cream cheese, softened
- ½ cup powdered sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- ¾ cup heavy cream
- 2 tablespoons unsalted butter
- ½ cup mini peanut butter cups, chopped (optional)
- ¼ cup mini chocolate chips (optional)
- ¼ cup roasted peanuts, chopped (optional)
- Chocolate syrup (optional)
- Peanut butter drizzle (optional)
- Flaky sea salt (optional)
Instructions
- Preheat the oven to 350°F and grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla, then beat until smooth.
- Slowly stir in the hot coffee until the batter is thin, then pour into the prepared pan.
- Bake for 35–40 minutes, or until a toothpick comes out with a few moist crumbs. Cool for 15 minutes.
- In a medium bowl, beat together peanut butter, cream cheese, powdered sugar, heavy cream, and vanilla until smooth and fluffy.
- Spread the peanut butter filling evenly over the slightly warm cake.
- For the ganache, place chocolate chips in a heatproof bowl. Heat heavy cream until it simmers, then pour over chocolate chips and let sit for 2 minutes. Stir until smooth and mix in butter until glossy.
- Pour the ganache evenly over the peanut butter layer.
- Top with chopped peanut butter cups, mini chocolate chips, and chopped peanuts. Drizzle with chocolate syrup and melted peanut butter if desired, and sprinkle with flaky sea salt.
- Allow the cake to rest for 20–30 minutes before slicing. For an extra gooey dessert, microwave individual slices for 10–15 seconds before serving.
