Description
A decadent Chocolate Peanut Butter Layer Cake with rich chocolate ganache, perfect for any dessert lover.
Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar (for frosting)
- 1 cup creamy peanut butter (for frosting)
- 1/4 cup heavy cream (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 1 cup semi-sweet chocolate chips (for ganache)
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes.
- Stir in the boiling water until the batter is smooth (the batter will be thin).
- Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to wire racks to cool completely.
- For the peanut butter frosting, beat the softened butter in a mixing bowl until creamy. Gradually add the powdered sugar and peanut butter, mixing until smooth. Add the heavy cream and vanilla extract, and beat until fluffy.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of peanut butter frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining peanut butter frosting.
- To make the chocolate ganache, heat the heavy cream in a small saucepan until just simmering. Pour the hot cream over the chocolate chips in a bowl and let sit for 2 minutes. Stir until smooth.
- Pour the ganache over the top of the frosted cake, allowing it to drip down the sides.
- Let the ganache set for about 30 minutes before slicing.
Notes
- For a richer flavor, add a teaspoon of instant coffee granules to the boiling water before mixing it into the batter.
- For a fun twist, try adding chopped peanuts or chocolate chips to the peanut butter frosting for added texture.
