A delightful Chocolate & Vanilla Funfetti Layer Cake that combines rich chocolate and vanilla flavors with colorful sprinkles for a fun twist.
Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- ½ cup rainbow sprinkles
- 1 cup unsalted butter (for vanilla frosting)
- 4 cups powdered sugar (for vanilla frosting)
- 2 teaspoons vanilla extract (for vanilla frosting)
- 2–4 tablespoons heavy cream (for vanilla frosting)
- 1 cup unsalted butter (for chocolate frosting)
- 4 cups powdered sugar (for chocolate frosting)
- ¾ cup unsweetened cocoa powder (for chocolate frosting)
- 2 teaspoons vanilla extract (for chocolate frosting)
- 2–4 tablespoons heavy cream (for chocolate frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
- Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
- Stir in the boiling water until the batter is smooth. Gently fold in the rainbow sprinkles.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to wire racks to cool completely.
- For the vanilla frosting, beat the softened butter in a bowl until creamy. Gradually add powdered sugar, mixing well. Add vanilla extract and enough heavy cream to achieve desired consistency.
- For the chocolate frosting, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well. Add vanilla extract and enough heavy cream to reach desired consistency.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of vanilla frosting on top. Place the second cake layer on top and frost the top and sides with chocolate frosting.
- Serve immediately or refrigerate until ready to serve.
Notes
- For a fun twist, try adding different colored sprinkles for a themed cake.
- Substitute half of the all-purpose flour with almond flour for a nutty flavor.
- You can also use cream cheese frosting instead of vanilla for a tangy contrast.
