Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • ½ cup rainbow sprinkles
  • 1 cup unsalted butter (for vanilla frosting)
  • 4 cups powdered sugar (for vanilla frosting)
  • 2 teaspoons vanilla extract (for vanilla frosting)
  • 24 tablespoons heavy cream (for vanilla frosting)
  • 1 cup unsalted butter (for chocolate frosting)
  • 4 cups powdered sugar (for chocolate frosting)
  • ¾ cup unsweetened cocoa powder (for chocolate frosting)
  • 2 teaspoons vanilla extract (for chocolate frosting)
  • 24 tablespoons heavy cream (for chocolate frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until well combined.
  4. Stir in the boiling water until the batter is smooth. Gently fold in the rainbow sprinkles.
  5. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to wire racks to cool completely.
  7. For the vanilla frosting, beat the softened butter in a bowl until creamy. Gradually add powdered sugar, mixing well. Add vanilla extract and enough heavy cream to achieve desired consistency.
  8. For the chocolate frosting, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, mixing well. Add vanilla extract and enough heavy cream to reach desired consistency.
  9. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of vanilla frosting on top. Place the second cake layer on top and frost the top and sides with chocolate frosting.
  10. Serve immediately or refrigerate until ready to serve.

  • For a fun twist, try adding different colored sprinkles for a themed cake.
  • Substitute half of the all-purpose flour with almond flour for a nutty flavor.
