Ingredients
- 2 cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- 1 large egg
- ¾ cup milk
- ⅓ cup melted butter
- 1 teaspoon vanilla extract
- ⅓ cup packed brown sugar
- 2 tablespoons all-purpose flour (for filling)
- 1½ teaspoons ground cinnamon (for filling)
- 2 tablespoons melted butter (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- ½ teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
- In a small bowl, combine the brown sugar, flour, cinnamon, and melted butter to make the cinnamon filling.
- Fill each muffin cup about halfway with batter. Add about 1 teaspoon of cinnamon filling, then cover with more batter.
- Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack.
- Whisk together the powdered sugar, milk, and vanilla to make the glaze.
- Drizzle the glaze over the warm muffins and serve.
