Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder

  • ¾ cup milk
  • ⅓ cup melted butter
  • 1 teaspoon vanilla extract
  • ⅓ cup packed brown sugar
  • 2 tablespoons all-purpose flour (for filling)
  • 1½ teaspoons ground cinnamon (for filling)
  • 2 tablespoons melted butter (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • ½ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease it.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the egg, milk, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
  5. In a small bowl, combine the brown sugar, flour, cinnamon, and melted butter to make the cinnamon filling.
  6. Fill each muffin cup about halfway with batter. Add about 1 teaspoon of cinnamon filling, then cover with more batter.
  7. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack.
  9. Whisk together the powdered sugar, milk, and vanilla to make the glaze.
  10. Drizzle the glaze over the warm muffins and serve.
