Description

A delightful Cinnamon Roll Pecan Cake that combines the flavors of cinnamon rolls and pecans in a moist cake, topped with a sweet glaze.

Ingredients

  • 2½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup sour cream
  • ½ cup whole milk
  • ¾ cup packed brown sugar
  • ½ cup chopped pecans
  • 2 tsp ground cinnamon
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1½ cups powdered sugar
  • 3 tbsp milk
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven: Heat oven to 350°F. Grease a 9×13-inch baking pan and lightly dust with flour.
  2. Make the cake batter: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar for 2–3 minutes until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla.
  4. Add the dry ingredients alternately with the sour cream and milk, beginning and ending with the dry ingredients. Mix just until combined.
  5. Make the cinnamon pecan filling: In a small bowl, combine the brown sugar, pecans, cinnamon, melted butter, and vanilla.
  6. Layer the cake: Spread half of the batter into the prepared pan. Sprinkle about two-thirds of the cinnamon pecan mixture evenly over the batter.
  7. Carefully spread the remaining batter over the top. Sprinkle the remaining cinnamon pecan mixture over the surface.
  8. Create the swirl: Run a butter knife gently through the batter in a few large swirling motions. Don’t over-swirl.
  9. Bake: Bake for 35–42 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  10. Make the glaze: While the cake cools, whisk together the powdered sugar, milk, melted butter, vanilla, and salt until smooth.
  11. Glaze: Let the cake cool for about 15 minutes, then drizzle the glaze generously over the warm cake.
  12. Serve: Slice and serve warm or at room temperature.

Notes

  • For an extra cinnamon-roll flavor, drizzle the glaze over the cake while it’s still slightly warm so it melts into the cinnamon pecan swirl.
