Description
Classic Apple Turnovers are delicious pastries filled with a sweet apple mixture, encased in flaky puff pastry, and topped with a vanilla glaze.
Ingredients
- 2 medium Granny Smith apples, peeled, cored, and diced
- 2 tbsp unsalted butter
- ¼ cup packed brown sugar
- ½ tsp ground cinnamon
- 1 tbsp cornstarch
- 1 tbsp water
- 1 tsp vanilla extract
- 1 tsp lemon juice
- Pinch of salt
- 1 package (17.3 oz) frozen puff pastry, thawed (usually 2 sheets)
- 1 large egg
- 1 tbsp water
- 1 tbsp coarse sugar, optional
- ½ cup powdered sugar
- 1–2 tbsp milk
- ¼ tsp vanilla extract
Instructions
- Make the apple filling: Melt the butter in a saucepan over medium heat. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook for 4–6 minutes, stirring occasionally, until the apples begin to soften. Mix the cornstarch with 1 tablespoon of water in a small bowl. Stir the cornstarch mixture into the apples and cook for another 1–2 minutes until the juices thicken. Remove from the heat and stir in the vanilla and salt. Let the filling cool completely before assembling the turnovers.
- Prepare the pastry: Preheat the oven to 400°F. Line a baking sheet with parchment paper. Unfold the thawed puff pastry on a lightly floured surface. Cut each sheet into four equal squares to make 8 squares. Whisk the egg with 1 tablespoon of water to make an egg wash.
- Fill and shape the turnovers: Spoon about 2 tablespoons of cooled apple filling onto one half of each pastry square, leaving a border around the edges. Brush the edges lightly with egg wash. Fold each square diagonally to form a triangle. Press the edges together, then crimp firmly with a fork to seal. Transfer the turnovers to the prepared baking sheet, spacing them about 2 inches apart. Cut 2–3 small slits in the top of each turnover to let steam escape. Brush the tops with egg wash and sprinkle with coarse sugar, if desired.
- Bake until golden: Bake for 18–25 minutes, until the pastry is puffed and deep golden brown. Transfer to a wire rack and allow to cool for at least 10–15 minutes.
- Add the vanilla glaze: Whisk the powdered sugar, 1 tablespoon of milk, and vanilla extract in a small bowl. Add more milk a little at a time until the glaze is smooth and pourable. Drizzle over the cooled turnovers. Let the glaze set for a few minutes before serving.
Notes
- Ensure the apple filling is completely cooled before assembling to prevent soggy pastry.
- For a richer flavor, consider adding a pinch of nutmeg to the apple filling.
- These turnovers can be frozen before baking; just add a few extra minutes to the baking time if baking from frozen.
