Ingredients
- 2 cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- ½ cup sweetened shredded coconut
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup canned coconut milk
- 1 teaspoon vanilla extract
- ½ teaspoon coconut extract
- ½ cup sweetened shredded coconut
- 2 tablespoons all-purpose flour
- ¼ teaspoon salt
- 1 cup sweetened shredded coconut (for topping)
- 1 cup whipped topping
- ½ cup toasted coconut flakes (for garnish)
Instructions
- Preheat the oven to 350°F. Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
- Make the crust: Mix graham cracker crumbs, melted butter, sugar, and shredded coconut until evenly combined. Press firmly into the bottom of the pan.
- Bake the crust for 8–10 minutes. Remove and let cool slightly.
- Make the filling: Beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing just until incorporated.
- Add coconut milk, vanilla, coconut extract, flour, and salt. Mix until smooth, then fold in the shredded coconut.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 35–40 minutes, until the edges are set and the center has a slight jiggle.
- Cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
- Add the topping: Spread whipped topping evenly over the chilled cheesecake. Sprinkle generously with toasted coconut.
- Lift the cheesecake from the pan using the parchment paper and cut into 16 bars.

- For an even stronger coconut flavor, toast the coconut topping in a dry skillet over medium-low heat for 3–5 minutes, stirring frequently until lightly golden.
