Ingredients

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • ½ cup sweetened shredded coconut
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup canned coconut milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon coconut extract
  • ½ cup sweetened shredded coconut
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon salt
  • 1 cup sweetened shredded coconut (for topping)
  • 1 cup whipped topping
  • ½ cup toasted coconut flakes (for garnish)

Instructions

  1. Preheat the oven to 350°F. Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. Make the crust: Mix graham cracker crumbs, melted butter, sugar, and shredded coconut until evenly combined. Press firmly into the bottom of the pan.
  3. Bake the crust for 8–10 minutes. Remove and let cool slightly.
  4. Make the filling: Beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing just until incorporated.
  5. Add coconut milk, vanilla, coconut extract, flour, and salt. Mix until smooth, then fold in the shredded coconut.
  6. Pour the cheesecake mixture over the crust and smooth the top.
  7. Bake for 35–40 minutes, until the edges are set and the center has a slight jiggle.
  8. Cool completely at room temperature, then refrigerate for at least 4 hours, preferably overnight.
  9. Add the topping: Spread whipped topping evenly over the chilled cheesecake. Sprinkle generously with toasted coconut.
  10. Lift the cheesecake from the pan using the parchment paper and cut into 16 bars.
