Description
A refreshing dessert delight featuring a creamy coconut and lime filling in a graham cracker crust, topped with whipped cream.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened shredded coconut
- ½ cup unsalted butter, melted
- 1 cup sweetened condensed milk
- ½ cup sour cream
- ¼ cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Additional shredded coconut for garnish
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, combine graham cracker crumbs, shredded coconut, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
- Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool completely.
- In a large bowl, whisk together the sweetened condensed milk, sour cream, lime juice, lime zest, and vanilla extract until smooth.
- Pour the mixture into the cooled crust and spread evenly. Refrigerate for at least 2 hours to set.
- In a separate bowl, beat the heavy whipping cream and powdered sugar until stiff peaks form.
- Spread or pipe the whipped cream over the chilled pie. Garnish with additional shredded coconut if desired.
- Slice and serve chilled.
Notes
- For a tropical twist, try adding diced fresh mango or pineapple on top of the whipped cream.
- You can also substitute the lime juice with lemon juice for a different citrus flavor.
