Description

A creamy and flavorful dish featuring cod fillets cooked in a rich roasted red pepper sauce.


Ingredients

  • 4 cod fillets, about 6 oz each
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup roasted red peppers, drained and chopped
  • ½ cup chicken or vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ¼ tsp red pepper flakes, optional
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley (for garnish)
  • 1 tbsp grated Parmesan (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Pat the cod fillets dry with paper towels. Season both sides with paprika, garlic powder, Italian seasoning, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the cod and cook for about 3–4 minutes per side, until lightly golden. Transfer to a plate.
  3. Reduce the heat to medium and add the butter. Once melted, add the garlic and cook for about 30 seconds.
  4. Stir in the roasted red peppers and cook for 2 minutes.
  5. Add the broth and heavy cream. Stir in the Italian seasoning, smoked paprika, red pepper flakes, salt, and black pepper. Bring to a gentle simmer.
  6. Stir in the Parmesan and cook for 2–3 minutes, stirring occasionally, until the sauce becomes creamy and slightly thickened.
  7. Carefully place the cod fillets back into the sauce. Spoon some sauce over the top. Cover and simmer for 4–6 minutes, or until the cod flakes easily with a fork and reaches 145°F internally.
  8. Stir the lemon juice into the sauce. Taste and adjust the seasoning if needed.
  9. Sprinkle with fresh parsley and Parmesan. Serve with lemon wedges alongside.

  • Serve over steamed rice, mashed potatoes, pasta, or with crusty bread to soak up the roasted red pepper sauce.
  • For an even smoother sauce, blend the roasted red peppers with the broth before adding them to the skillet.
